I’m happy to report that today’s impromptu trial of a very traditional poutine was a smash hit. I first had this Canadian classic in Montreal, where the dish finds its humble origins. There it is essentially street food eaten casually, sort of like a heartier version of macaroni & cheese to us southerners. Taylor ginned up a delicious gravy and just for this today and it is delicious. Look for this to appear on the menu next week after we secure cheese curds that meet our standards for awesomeness. Sure, you can add chicken to it…or bacon….but you don’t have to. By the way, if you haven’t visited Canada…you should. Montreal is one of the best food towns I have ever visited.
